I haven't been writing much lately. I find so many other things to do instead, like celebrating my daughter's wedding, walking the dog, and collecting children's stories about Jazzy. But with Thanksgiving coming up I have another distraction and that is food.
Each Thanksgiving is an excuse to make cheesecake. I love cheesecake but have never been able to make it without it cracking. Yes, I have tried the water under the pan but I followed a recipe today that was crackproof. I guess it is crackproof for everyone else.
Normally I follow the recipe on the inside of the Philadelphia cream cheese box, but I went cheap and got the Food-Lion variety instead. There is no recipe on the generic box. So, I found a recipe online. It used sour cream. I didn't have any so instead, I used whipped cream and lemon juice (read that on another website.) I didn't have quite enough so added a little extra vanilla. Why? Because I like vanilla.
The recipe said if you bake it slowly for 75 minutes it won't crack..... Well, it cracked and it fell in on itself. If I look on the bright side, the well on the top will hold a strawberry or chocolate glaze nicely. No matter what it looks like, though, you can't go wrong with cream cheese, eggs, sugar and vanilla... yum yum. I can't wait until Thursday to eat it.
I made the second pie this morning. Dale loves gooey pies so I made him one with apples, strawberries, and blueberries. I used store-bought pastry but guessed with all the other stuff. I hope it doesn't kill anyone. ha ha ha.
